Lavender & Honey — June / July 2027

Up to 2 guests per room. 3 rooms available per stay — 2 nights minimum.

In late June the lavender at Casale Fallarese reaches full bloom. A short window follows — ten days, sometimes fewer, when the cutting, the distillation, and the honey extraction all happen at once. The stay is built around that window.

The bees work the lavender and wildflower through the season. By late June the hives are at their peak. Guests participate in the extraction directly, removing frames, uncapping cells, drawing honey the same day. The timing follows the hive cycle, not a fixed itinerary. What happens each morning is determined by what the estate requires.

The lavender is cut by hand in the early hours, bundled, and hung to dry in the stone outbuildings. Distillation follows when the volume justifies it. Both processes, slow, precise, dependent on conditions, run alongside each other through the stay.

The stay includes:

  • 2 nights at Casale Fallarese

  • All meals, prepared from the estate and the surrounding territory

  • Lavender harvest and processing — cutting, bundling, distillation

  • Honey extraction — timing dependent on hive cycle and season

  • Estate lavender and honey to take home

The pace of the summer stay follows the land, not a schedule. What happens each day is determined by what the estate requires that morning.

Each stay follows a fixed seasonal calendar. Dates are released in advance and filled in order of booking. A metal card is issued upon confirmation.
