A natural wood box containing the two primary expressions of Casale Fallarese: olive oil and saffron, grown on the same land, in the same season, by the same family.

The oil is pressed from Leccino olives — the native variety of Tuscia, cultivated on the estate continuously for over 125 years. Cold extraction at or below 27°C preserves the full polyphenol profile: grassy, slightly bitter, with a clean finish. Harvest year on label.

The saffron is grown in the fields of Casale Fallarese and harvested by hand at dawn during the October flowering. Each pistil is separated the same morning it is picked. The marble jar — turned from a single piece of giallo Siena or bardiglio stone, sealed with cork — is made specifically for this product. The harvest number is marked on the base.

The linen letter inside the box describes the season, the land, and the people who produced what is inside.

This is the most complete expression of the estate in a single object.

Oil & Saffron

A reduced composition in which the saffron becomes the focal point.

The oil and saffron share the same origin — the groves and fields of Casale Fallarese in Corchiano, Province of Viterbo. The 500ml bottle carries the harvest year and Tuscia designation. Cold pressed, unfiltered, from olives harvested in October.

The saffron arrives in a hand-turned marble jar — giallo Siena or bardiglio — with a cork top. 3g of deep crimson threads, numbered by harvest year. Italian estate saffron at this scale is rare. The quantity is limited to what the field produces each season.

Double Olive Oil

A direct and unambiguous expression of the estate's production. Nothing added.

Olive & Saffron — October / November 2026

Up to 2 guests per room. 3 rooms available per stay — 2 nights minimum.

Twice a year, the estate opens to a small number of guests — never more than six at a time — who come to participate directly in what is happening on the land.

The autumn stay coincides with the convergence of two harvests: saffron in the early morning, olives through the day, pressing at dusk. This sequence — which happens once a year and cannot be replicated outside of its specific October–November window — is what guests enter.

The stay includes:

• 2 nights at Casale Fallarese, a residence designed by Cardenio Petrucci

• All meals, prepared from the estate and the surrounding territory

• Saffron harvest at dawn — guests participate in the picking and separation of pistils

• Olive harvest during the day — on the estate's own trees and managed groves

• Pressing at dusk — the olives harvested that day are pressed the same evening

• 3 bottles of oil from the pressing attended + 1g of saffron harvested during the stay

Guests do not observe. They participate.

Each stay follows a fixed seasonal calendar. Dates are released in advance and filled in order of booking. A metal card is issued upon confirmation — it carries the guest's name, the season, and the harvest year. It is theirs to keep.

Lavender & Honey — June / July 2027

Up to 2 guests per room. 3 rooms available per stay — 2 nights minimum.

In late June the lavender at Casale Fallarese reaches full bloom. A short window follows — ten days, sometimes fewer, when the cutting, the distillation, and the honey extraction all happen at once. The stay is built around that window.

The bees work the lavender and wildflower through the season. By late June the hives are at their peak. Guests participate in the extraction directly, removing frames, uncapping cells, drawing honey the same day. The timing follows the hive cycle, not a fixed itinerary. What happens each morning is determined by what the estate requires.

The lavender is cut by hand in the early hours, bundled, and hung to dry in the stone outbuildings. Distillation follows when the volume justifies it. Both processes, slow, precise, dependent on conditions, run alongside each other through the stay.

• Lavender harvest and processing — cutting, bundling, distillation

• Honey extraction — timing dependent on hive cycle and season

• Estate lavender and honey to take home

Allocation $2,950 — one time

Messa a dimora is the Italian agricultural term for the permanent planting of a tree — the moment a root commits to a specific soil and does not leave.

This allocation supports the expansion of Casale Fallarese's olive groves with a new planting of 100 to 125 Lecciana trees — a variety distinct from the existing Leccino grove, selected in collaboration with the DAFNE department of the University of Tuscia for its compatibility with the estate's soil profile and its long-term yield potential.

Each allocation includes:

• 3 to 5 Lecciana olive trees from the new grove, planted permanently on the estate — location recorded

• Participation in the saffron and lavender fields proportional to allocation

• Annual return: 24 500ml bottles of estate olive oil + 3g of Viola saffron

• Duration: 5 years

• Priority booking access to harvest stays before general calendar release

The trees do not leave when the five years are complete. They remain in the ground as part of the estate's permanent grove. The allocation ends; the planting does not.

This is not a symbolic gesture. It is a direct investment in the land's production and a share of what the land returns each season.

A limited number of allocations are released each year, tied to the planting calendar and the available surface of the new grove.
